Banana Nut Oatmeal

I had a hard time deciding between oatmeal and quinoa flakes this morning. Finally I settled on oatmeal since I’ve just had quinoa flakes two days in a row. Time for something different. I made it the usual way with soy milk and cinnamon, topped with banana and walnuts.

For breakfast today I made quinoa flakes with soy milk. Instead of cooking the banana into the mixture on the stove, I decided to add it on top. I think I like it better that way. I also sprinkled my bowl with walnuts (healthy fats!).

For dinner tonight we had a chicken and veggie stir fry which included broccoli, green beans, carrots, water chestnuts (eww gross – I picked mine out!), red bell pepper, and cashews all on top of rice. On the side we had fruit salad.

I’m Amanda - I’m 23, a Christian, and I currently live with my dad, mom, and younger sister in California where I work part time as an admin assistant and am also pursuing my love of writing. Right now I'm recovering from anorexia, and I'll be going to residential treatment starting Feb. 23. While I'm there I'll be taking a break from blogging, but I hope to pick up again when I return.
